COGNAC

Cognac is a type of Brandy, produced from the distillation of white wine. It must be distilled twice by rule on copper pot stills, and aged in French oak barrels for 2 years minimum.

COGNAC REGIONS

Cognac can just be produced in a small French region called COGNAC.

THE CRUS OF COGNAC

  1.  GRANDE CHAMPAGNE (about 17% of the production).

  2. PETITE CHAMPAGNE (about 22% of production).

  3. BORDERIES (about 5% of production).

  4. FINS BOIS ( about 43% of production)

  5. BON BOIS (ABOUT 12% of production).

  6. BOIS ORDINAIRES ( about 1% of production).

Each region has a specific character, and gives different aromas to the wine and Eau-de-vie.

FINE CHAMPAGNE on the label indicates a blended of Grande and Petite Champagne, with a minimum of 50% Grande Champagne

There are 175 Cognac firms that range is size from the small farmer to the multinational shipper.

The Cognac region was awarded appellation d'origine controlee (AOC) protection for its spirits in 1936, making it one of the first region in Grance to receive the AOC designation.

Distillation takes place in traditional alembic or pot still, knowns as CHARENTAIS still in this region.

Cognac is mature in oak for minimum of two years, but some versions are eged longer. The leading brands of cognac are Hennessey, Martell, Remy Martin, and Courvoisier.
